Beef Stew Mashed Potato Bowl
Beef stew BABY. Nothing like it. I have a personal connection to this one being my screenname was once beefstew93. Fun times.
This here beef stew is layered with smashed potatoes, corn, beef chunks, the trifecta (carrots, celery, carrots), lots of parsley, and some cherries for some fun acidic sweetness.
Overall, this one is pretty instinctual, which makes it easy! And generally, nothing not to like about it. And cooking with red wine and drinking it at the same time makes everything better… so.
Ingredients for 4:
Beef chunks
2 onions
3 carrots
3 celery stalks
4 garlic cloves
1/8 cup red wine
1 cup of beef broth
3 russet potatoes
Big bunch of parsley
1/4 cup of cherries
Salt and pepper
Butter
Boil a big pot of salted water for your potatoes, add potatoes once boiling.
Dice your onions, celery, carrots, and garlic, sauté in large pan with a wee bit of butter, salt and pepper
Once veggies are a slightly browned, add your wine, broth, and beef chunks, cook on low
In another pan, add your corn with a bit of butter, salt and pepper, cook until a little browned
Once you’re able to easily slide a fork in and out of the potatoes, take out of the pot and mix them with a 1/2 stick of butter, greek yogurt, or sour cream.. your choice really
Cut your cherries into quarters
Once all is cooked, assemble your bowl with smashed potatoes, corn, beef and vegetables, cherries, lots of parsley, extra salt and pepper, and save the extra broth the beef was cooking in to drizzle over your bowl. Then say, YUMMMMM.
