Tangy Vegan Jackfruit Grain Browl
Essentially, this bowl is just PACKED with allll the veggies. Fresh and colorful and vegan! We made a lemon ginger tahini dressing. Also extremely happy I made this one while we still had daylight to get some very pretty photos. The only things that you cook here is the quinoa and the jackfruit. This was actually the first time I ever made the bbq jackfruit, it does wildly look like pulled chicken and is suuuper filling.
Ingredients:
Quinoa
Watercress
Parsley
Pickled red onions
Small campari tomatoes
Avocado
Radish
Sprouts
Pomegranate seeds
Orange slices
Tahini Dressing:
3 TBSP Tahini
Olive oil
1 TSP freshly grated ginger
1 lemon - squeezed
Drain your jackfruit from the can, put in bowl and begin to pull apart. Next, add your choice of barbecue sauce, we used a mustard based one. Add olive oil drizzle to pan and add jackfruit. Cook longer if you want it crispier!
Follow directions on your quinoa box/bag.
Blend, food process, or simply whip together your tahini.
Chop what you need and add to your bowl! Easy peasy!
