Day 4: 30 Days of Egg Toast

Whoa whoa whoa. Day 4 off egg toast and the inspiration was drawn from our frequent dinner choice of FRIED RICE! This toast was super easy, and has some kick a sauces.. soo, win win!

Ingredients:

-Eggs

-Carrots

-Baby corn

-Peas

-Bread of your choice

-Ponzu (or soy sauce)

-Balsamic

-Mirin (rice wine)

-Basil

-Garlic salt

Alright, alright, alright. Who is ready to make a reduction? Yoooou are! Get equal parts soy sauce or ponzu, mirin, and balsamic vinegar and 2 basil leaves going on the stove on low heat and cover. You’ll leave this chillin’ for like 15 minutes and once it’s to about half the amount, she ready!

Time to cube up them carrots and baby corns. We bought a frozen bag of peas that you steam, and popped those in the microwave before we moved them over to the stove top.

Cook ‘em them veggies now! Add a little cooking oil and ponzu/soy sauce to the pan. And on your pan to the other side, start cooking your scrambled eggs. Once those are looking almost done, scoot ‘em over to the veggies.

Ooooh yeah. Time remove your reduction sauce from the stove and into a litttle bowl. We also whipped up some yum yum sauce, with mayo ketchup, white vinegar, and sugar. Like, a good bit of sugar. WORTH IT.

Put that toast together and THERE YA HAVE IT. THE KUNG FU PANDA. Easy, veg heavy, sauce it as you’d like. Yum, yum, yum.
