Day 2: 30 Days of Egg Toast

Day 2 of our egg toast journey brought us all the way to HAWAII with our scramble, spam and pineapple egg toast! Buut if we’re being honest, it’s more of a sandwich. We’re just going to let this one slide though. She was dyin’ for a top bun.
Look at our cute little ingredients! Here’s everything you’ll need to make this legendary island time egg toasty sandwich:
One can of Spam
Ponzu sauce
King’s Hawaiian Savory Butter Rolls
EGGS
Sriracha
Mayonaise
Pineapple
Oil or butter
That big hunk of meat in a can? Slice that juicy baby UP. Throw it on the pan with some of your ponzu sauce and some cooking oil and get them meat hunks nice and browned on some medium heat. I am guilty of almost always cranking everything to high heat and then lettin’ it burn but ye know, patience is key. Yes, you will be shocked when it starts to smell amaaaazing.
Get your rolls buttered and toasted on the pan and get going on your scrambled eggs. Then, start whippin’ up your spicy mayo. I use roughly 2 parts mayo, 1 part sriracha. THENNN, cut your little pineapple slices. Our pineapple was taken out of the skin, and we cut the rings at home. Chances are your spam is probably nice and brown by now and it’s time to MAKE THAT EGGY TOAST/SANDWICH.
I think a normal person woulda had the meat go first on the bottom.. buut I wanted to show off them layers.
OOOF. That pineapple. Love a good citrusy punch. And spicy mayo.. ahhhhh. I would drink it. I would, I would.
As a final verdict, Tim’s parents were even shocked at how much they enjoyed this one. I mean, spam doesn’t have the best reputation. Tim said he would have had half the amount of spam on the sandwich. It is pretty salty, so maybe we’ll try the 25% less sodium one next time.
