Day 1: 30 Days of Egg Toast
I think we all feel a little mentally displaced when we hear that it’s AUGUST. Even as an adult in the real world, the wind down of summer still gives me that feeling of running out of time, or not doing everything I had hoped to do by the end of the season - or ya know, when school starts. August is just.. really strange emotionally. So really, what better time is there to start our 30 day egg toast journey to give us a sense of accomplishment?
Tim (bae) and myself packed up our Nashville house and moved in with his parents at their house on Lake Hartwell, South Carolina. We’re coming back to Nashville in a month or two, not to worry. Anyway, we were at a friends house last week and got on the topic of social media content, specifically for Tim, in hopes we deconstruct how BTS has such a loyal and engaged fanbase, and use those same methods. Eventually, we decided that their template for social media would be pretttty difficult to replicate without six other band members. Aside from that, we talked about consistency, and if someone were to visit his page - how could you get them to feel like they know you?
Well, well. As somehow who has a front row seat to Tim’s everyday life, I know he makes his egg toast every single morning. So I basically said, just post your egg toast every single morning, then eventually when other people are eating egg toasts, they’ll story it and tag you, and it will just be like this little weird quirky thing that you can connect with people on. A few days later.. I totally hijacked this idea for myself and here we are with 30 DAYS OF EGG TOAST!!
I felt like I just had to give you the back story on how this exotic idea came to be. I’m trying to find my place in this food world without being a pro chef. So here you have it - me and Tim, experimenting, succeeding, failing, learning, and havin’ a grand ole time creating our egg toasts. We’re getting pretty crazy with these toast themes. And we would totally looooooove for you to either try one of these toasts yourself, OR submit your own combo!
So here you go.. DAY 1 EGG TOAST!

Southern, spicy, and sweet.
Ingredients:
White Bread
We had Trader Joe’s version on hand, any kind will do!
Eggs (duh)
Salt
White Vinegar
This is to add to the boiling water when poaching eggs
1. Get out your bread and drizzle chili oil for desired spiciness
TRUST ME, toast comes out SO MUCH BETTER when you do it on the pan. Like straight up diner toast.
Normally I like an even coating, but this was all we had left in our little bottle!
Keep an eye on your toast for desired toasty-ness! I prefer mine almost burnt.
2. Poach them eggs!
Separate your eggs into individual bowls, or cups, whatever you got!
Bring water to a boil, add salt and a little bit of white vinegar (this will help keep the egg together)
Once boiling, gently drop in eggs.
Turn heat on low and cover, set timer for 5 minutes
Grab a slotted spoon and remove eggs - put them on their own plate
Mine still carried some water with them, so don’t go puttin’ this straight on the toast now
Were my poached eggs perfect? I honestly have no idea. My biggest fret was all the extra egg white in the pot. But I guesss it reeallly did not matter at the end. Because the runny-ness was PERFECTO.
3. Put your toast together!
Get ‘yo toast
Spread that pimento
Plop on that egg
Layer on that pepper jelly
I mean..
All in all.. I very much enjoyed this toast. I’m a biiig pepper jelly girl. The one from Trader Joe’s is a sweet and spicy kind, so if you’re into more of the straight spicy kind, I’d probably go with another brand. Tim thinks we could have balanced the sweet and salty with literally just adding more salt on top. Some pink himalayan if you will. Some micro greens on top could have been a nice touch too. But HEY, we scrapped this together with what we had, so that’s impressive. Would 10/10 recommend trying this toast at home!
