Day 15: 30 Days of Egg Toast

When in South Carolina.. make crab cakes benedict. We followed a crab cake recipe for this one (first timers), and added a little extra pizazz. The people loved this one. But for meee, this crab cake would have been a worlds better if we had lump crab versus our ground up canned crap. ANYWHOM, you can watch this fun little TikTok on how we made it!
Crab Cake Ingredients:
2 cans of lump crab
1 cup bread crumbs (we ended up using more)
2 minced garlic cloves
Lil’ Salt
Diced jalapenos - add for desired spice
1/4 cup lemon juice
1 TBSP Dijon
2 TBSP Mayonaise
2 Eggs
Mush all these things together and make little crab cake patties and pop ‘em in the fridge for an hour. When that hours up we deep fried these pups on the stove in about 2 inches of vegetable oil for about a minute and a half each. Be careful, they’re fragile! Toasted some english muffins. Made a little lemony salad, a poached egg, some salt and pep, dill, and VOILA.
Also to note, this is typically served with a hollandaise sauce. DO NOT try to make a quick blender version. We tried. It was disgusting. Get the powder packet if you really want it but don’t have the time to make it!
