Day 7: 30 Days of Egg Toast
The Meghan Markle
Our take on a classic English breakfast turned out to be quiiiite American. So who better to name this toast after than the badass princess Meghan Markle? Everything about this toast was rich and salty and filling. Honestly, a lot like a cheeseburger. If there’s a way to incorporate baked beans into my breakfast.. I’m going to do it.
Ingredients:
-English muffin
-Campari tomatoes
-Busch’s Baked Beans
-Mushrooms
-Ground pork sausage
-Maple syrup
-HP Brown Sauce
-Butter
-Fig jam (or any jam you’d like!)
Alrriiiighty. Let’s get cookin’! We put together our pork sausage patties with milld ground pork and maple syrup for that breakfasty, sweet sausage taste. For the shrooms, these were actually from a can! So they were extra moist. It took a good bit longer to brown these up with the help of some salt and olive oil.
Woweeee. I love a good roasted tomato. This one we just did on the pan with some olive oil. They just burst in your mouth and it is so so so good and easy.
We toasted the english muffins on the stove top also, along with fried the eggs, and warmed up the can of Busch’s baked beans in a small pot on the stove. We left the toast open with the english muffin, and spread butter and fig jam on the top to have as a little sweet balance. Everything in this one is super harmonious, and super breakfasty. I think if we ever get to have gatherings again, I am 100% going to do a classic English Breakfast theme spread for a brunch. Warm, robust, and honestly, probably would be the best ever on Christmas morning.
Put together that toast and generously drizzle that HP sauce (basically tastes like a steak sauce) and you are GOOD.
